Louisiana Red Beans and Rice with Turkey

List of Ingredients
1 lb. red beans, soaked overnight
1 lb. Honeysuckle White Sweet or
Hot Italian Sausage
3 stalks celery, chopped
1 green bell pepper, chopped
1 large onion, chopped
6 cloves garlic, minced
2 bay leaves
1 tsp. dried thyme
1 tsp. cayenne pepper
1/2 tsp. black pepper
1 tsp. salt
1 tsp. Creole seasoning Recipe
Rinse and soak beans overnight. (Or use the quick soak method. Cover beans
in a big pot full of water. Bring to a boil. Cook for one minute. Cover and
remove from heat. Let stand for one hour.)
Place beans in large pot and cover with water, about 6 cups. Bring to a boil
and simmer for 1 1/2 hours, or until beans are tender. Brown sausage over
medium high heat. Remove. Slice sausage into 1/2" chunks. Add remaining
ingredients and simmer for 1 hour, stirring occasionally. Add more water if
necessary. Serve over rice with hot sauce
