JALAPENO CORNBREAD

List of Ingredients
1 1/8 cups yellow cornmeal
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1/4 cup whole wheat flour
1 1/4 cups buttermilk
1 egg, lightly beaten
2 egg whites, lightly beaten
2 Tbs. diced jalapeno's, + 12 whole slices
Recipe
Preheat oven to 450 degrees. Prepare in a 8x8 inch baking pan with non stick cooking spray. I make muffins instead, so I just spray my muffin tin with one spray per muffin.
Sift into a large bowl cornmeal, baking powder, baking soda, salt, and flour. In another bowl combine buttermilk, eggs and jalepenos, then stir in the dry ingredients. Pour batter into the baking pan or in the muffin tins. Bake 5 mins, then add the 12 whole slices of jalapenos to the top of the corn bread. Return to oven and continue baking for 10 minutes or until it is finished.
