    List of Ingredients




    1 pound low-fat sausage (I use turkey chorizo, a Portuguese Sausage-ay turkey sausage would do)
    1 cup onions
    1 green pepper (cut into strips and then in half)
    2 minced clove garlic cloves
    1/4 tsp table salt
    1/4 tsp black pepper
    29 oz canned diced tomatoes
    1 Tbsp basil
    1 serving cooking spray (5 one-second sprays per serving)
    1/2 cup part-skim mozzarella cheese
    1/2 cup shredded Parmesan cheese
    3/4 (12 ounces) pound uncooked ziti (I use penne pasta sometimes)

    Remove casings from sausage. Slice sausage and cut medallions in half. Cook sausage, onion, green pepper, and garlic in a nonstick skillet over medium heat for 6 minutes. Add the tomato paste, salt, pepper, and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

    Combine cooked pasta, sausage mixture, and basil. Place half the pasta mixture in a 4-quart casserole dish coated with cooking spray. Top with half of mozzarella and half of parmesan. Repeat layers. Bake at 350 degrees for 25 minutes.
