    CUBAN PORK AND SWEET POTATO STEW

    SERVES: 4 WW POINTS PER SERVING: 5

    List of Ingredients




    1 large sweet potato(es), peeled and cut into 1/2-inch dice (about 1 lb)
    1 pound lean pork loin, cut into 1-inch pieces
    14 1/2 oz canned diced tomatoes, with green chiles
    1 medium garlic clove(s), minced
    1/4 cup orange juice
    2 medium scallion(s), chopped (green parts only)
    1/2 tsp table salt
    1/4 tsp ground cumin
    1/4 tsp black pepper
    1 1/2 Tbsp fresh lime juice
    2 Tbsp cilantro, fresh, chopped

    Recipe



    ** Cut everything (but the lime juice and cilantro) and place it in the pot and cook on low 7 hours.

    ** Add lime juice and cilantro and cook on high 5 more minutes, serve.

    NOTE: I had a 2lb. roast so I doubled it basically. I didn't have the mexican tomatoes and used 2 cans regular plus 1 can of green chilies. I also had to add a little liquid to get enough to cook come close to covering the potatoes and pork.
