    List of Ingredients




    1 pound uncooked boneless, skinless chicken breast
    2 Tbsp olive oil
    1 tsp fresh rosemary
    1 tsp fresh thyme
    1 tsp fresh parsley
    1 cup marinara sauce
    1/2 cup shredded fat-free mozzarella cheese
    8 tsp grated Parmesan cheese
    2 Tbsp light butter

    Recipe



    Preheat oven to 500 F.
    Chop the herbs.
    Stir the oil and herbs in a bowl.
    Heat a heavy large oven proof skillset over high heat.
    Brush both sides of the chicken with the herbed oil, S&P to taste.
    Spray pan with PAM.
    Add the cutlets and cook until just brown, about 2 minutes each side.
    Remove the skillet from the heat.
    Spoon the marinara sauce over and around the cutlets.
    Sprinkle 1 tsp mozzarella over each cutlet, then sprinkle 1 Tbsp of parmesan cheese over each.
    Cut up butter and place a piece on each piece of chicken.
    Put skillet in oven (or transfer to oven proof dish) and bake until the cheese melts and the chicken is cooked through, about 3 to 5 minutes.

    **NOTES:
    Use thin sliced chicken cutlets - then you get 2 pieces per serving!
    You can use dried herbs, but some of fresh flavor might not be there.
    The type of sauce you use can influence the points value.
    If you want to add more cheese or sauce, make sure you adjust the points as needed.
