    1 (14 oz.) can beef broth
    3 Tbps. flour
    1/2 tsp. salt, divided
    1/2 cup picante sauce (salsa), divided
    12 oz. ground beef, extra lean
    3 Tbsp. Italian-seasoned breadcrumbs
    1 large egg white
    Cooking spray
    1/2 (8 oz.) pkg. presliced mushrooms (I used canned mushrooms and it turned out good)

    (This is the perfect recipe for unexpected company. Your guests are sure to feel welcome when you serve this down-home recipe with creamy mashed potatoes and crisp green beans)


    Combine beef broth, flour and 1/4 tsp. salt in a small bowl; stir with a whisk. Add 1/4 cup picante sauce; stir well. Set aside.

    Combine beef, breadcrumbs, egg white, and remaining picante sauce and salt in a large bowl. Divide mixture into 4 equal portions, shaping each into a 1/2 inch thick patty; set aside.

    Heat a large nonstick skillet coated with cooking spray over medium heat. Add patties; cook 5 minutes on each side or until done. Remove patties from pan; cover and set aside.

    Add mushrooms to pan; saute 2 minutes or until browned.

    Add reserved broth mixture to pan (make sure you whisk it good again). Bring to a boil; cook 3 minutes or until slightly thick, stirring constantly. Return patties to pan and cook until thoroughly heated. Yield: 4 servings (serving size: 1 patty and 1/4 cup sauce) Points 5 per serving.

    (I made this again tonight using chicken broth instead of beef and using ground turkey instead of ground beef) and it was terrific. You can make the patties ahead, wrap in heavy-duty plastic wrap and freeze. Thaw before cooking. I took the above advice and served with mashed potatoes and Garlicky Green Beans (recipe found on boards for green beans), Yum!
