    Gourmet Potatoes

    Recipe Introduction


    Fall Potluck 2000


    List of Ingredients


    • 6-7 med. red potatoes
    • 1/3 c. minced green onion (including tops)
    • 1/4 c. margarine
    • 2 c. shredded cheddar cheese
    • 1-1/2 c. sour cream
    • 1 t. salt
    • Pepper to taste


    Instructions


    1. Boil potatoes in skins; cool, peel & grate.

    2. In a saucepan saute' onion in margarine.

    3. Add cheese & cook until melted.

    4. Remove from heat and add sour cream, salt & pepper.

    5. Fold this mixture into potatoes & empty into buttered 2-qt. casserole dish.

    6. Bake at 325 degrees for 30 minutes.
