Gourmet Potatoes

Fall Potluck 2000
List of Ingredients
- 6-7 med. red potatoes
- 1/3 c. minced green onion (including tops)
- 1/4 c. margarine
- 2 c. shredded cheddar cheese
- 1-1/2 c. sour cream
- 1 t. salt
- Pepper to taste
Instructions
- Boil potatoes in skins; cool, peel & grate.
- In a saucepan saute' onion in margarine.
- Add cheese & cook until melted.
- Remove from heat and add sour cream, salt & pepper.
- Fold this mixture into potatoes & empty into buttered 2-qt. casserole dish.
- Bake at 325 degrees for 30 minutes.
