1 1/2 cup all-purpose flour
3 tsp. baking powder
1 tbsp. sugar
1/2 tsp. salt
1 beaten egg
1 cup milk
2 tbsp. salad or vegetable oil
Recipe
Sift together dry ingredients. Combine egg, milk and oil, add to dry ingredients. Stir till just moistened and no lumps. Bake on hot griddle (sprinkled with oil, works better).
Makes about 12 dollar-size or 8 4-inch pancakes.
*For thinner pancakes, add 2 tbsp. milk to batter.
Feather pancakes: Reduce flour to 1 cup. Increase baking powder and sugar to 2 tbsp. each. Add dry ingredients to liquid, beat till smooth. Bake on hot griddle.
