    Green Pepper Steak

    My Great Recipes (with modifications)


    List of Ingredients


    • 1 lb. beef chuck or round, fat trimmed
    • 1/4 c. soy sauce
    • 1 clove garlic, chopped (salt or powder may be substituted)
    • 1 1/2 tsp. fresh ginger, grated or finely chopped OR 1/2 tsp. ground
    • 1/4 c. oil
    • 1 c. green onion, thinly sliced diagonally OR 1 cup yellow, brown or white onion, cut in half and sliced
    • 1 c. green peppers (or red or yellow or mixture), cut into chunks or strips
    • 2 stalks celery, thinkly sliced diagonally
    • 1 Tblespn. cornstarch
    • 1 c. cold water
    • 2-3 medium tomatoes OR 4-6 Romas, cut into wedges


    Instructions


    1. Cut beef across the grain into thin strips.

    2. Combine soy sauce, garlic & ginger. Add beef. Toss and set aside.

    3. Prepare vegetables.

    4. Heat oil in large frying pan or wok. Add beef and toss over high heat until browned. Taste meat for tenderness and if needed, cover and simmer 30 to 40 min. over low heat.

    5. Turn heat up and add vegetables. Toss until vegetables are tender crisp, about 10 min.

    6. Mix cornstarch with water. Add to pan: stir and cook until thickened.

    7. Add tomatoes and gently toss with meat/vegetable mixture until heated through.

    8. Serve over hot fluffy rice.



    Final Comments


    Makes about 4 servings.Other vegetables may be added, for variety, such as: canned mushroom; fresh jalapenos or other hot peppers, seeds removed and cut in strips; bamboo shoots; jicama, thinly sliced into strips; water chestnuts; beansprouts or whatever appeals to you.
