Recipe Introduction
You will fall in love with this thick, rich cheesecake! We like it plain but you can serve it with fresh fruit or pie filling.
List of Ingredients
- 2 cups of graham cracker crumbs
- 1/2 cup of melted margarine
- 5 8oz. pkgs. of softened cream cheese
- 1-3/4 cups of sugar
- 2 TBL. all purpose flour
- 1-1/2 tsp. vanilla extract
- 5 eggs
- 2 egg yolks
- 1/3 cup of whipping cream
Instructions
- For crust, combine the graham cracker crumbs and the melted butter. Stir until well combined and press onto the bottom and 1" up the sides of a greased springform pan.
- In a bowl, combine the cream cheese, sugar, flour, and vanilla. Beat with mixer until fluffy.
- Add eggs and egg yolks, beating on low speed just until combined.
- Stir in whipping cream and pour mixture into prepared pan.
- Place springform pan on a cookie sheet in the oven and bake at 325 for 1-1/2 hours or until the center appears nearly set when shaken.
- Cool 15 minutes.
- Loosen crust from sides of pan.
- Cool 30 minutes more; remove sides of pan and cool completey.
- Chill 4-24 hours.
Final Comments
I don't cover my cheesecake until after it has been cut. Covering beforehand creates a "wet look".
Store in the refrigerator. This cheesecake takes almost 2 hours in my oven to bake. Please adjust your baking time accordingly.
