    This is a great Chicken and Rice recipe I got from my friend who got it from her mom. It's delish!

    List of Ingredients




    8 pieces of chicken
    1/2 t salt
    1/4 t ground black pepper
    2 T olive oil
    1 lg onion - thinly sliced
    1 med red bell pepper - cored, seeded, and thinly sliced
    3 lg garlic cloves - minced
    3 med carrots - thinly sliced
    2 celery stalks - thinly sliced
    3 C chicken broth
    salt and pepper to taste
    2 C uncooked white rice

    Pat the chicken dry and season with salt and pepper... can use paprika also. In large skillet (or dutch oven), heat oil over medium heat. Add chicken and cook 4-5 minutes per side or until browned all over. Transfer chicken to a plate and set aside.

    Add onion and bell pepper to skillet and cook - stirring about 5 minutes or until onion is soft. Add the garlic, carrots, and celery, and cook stirring occasionally for about 10 minutes - or until carrots and celery are soft. Add the salt and season to taste with salt and pepper. Return the chicken to the pan, partially cover, and simmer - stirring occasionally for 25 minutes. Add the rice and simmer, partially covered, for about 25 minutes longer - or until rice is tender and allt he liquid has been absorbed.

    Spoon the rice and chicken on a platter and serve.

    Serves 6 people.
