    Recipe Introduction

    My Mom absolutely loved Fried Egg Plant I remember being a kid and we would make it and eat it with just ketchup but we would also make it and eat it as eggplant parm. Hope You Enjoy!

    List of Ingredients

    6 Eggs
    1 Egg Plant
    Italian Bread Crumbs
    Parmasan Cheese
    Oil
    Favorite Tomato Sauce
    Mozzerella Cheese

    Recipe

    1. Wash and Thinly Slice Eggplant

    2. Set up scrambled eggs, Italian Bread Crumbs,
    Sprinkle about 1/2 a cup of parmasan cheese into
    the bread crumbs mix well. Heat Cooking oil in
    skillet.

    3. Grab a plate for the breaded egg plants
    Then start breading dipping in egg, bread crumbs
    egg, bread crumbs (double breading) then onto
    the plate. Repeat until all accomplished.

    4. Test oil with a little of the bread crumb mixture
    If it comes out golden oil is nice and hot.
    Fry egg plant pieces on both sides. Once golden
    they are done :)

    5. In a pyrex dish layer egg plant, sauce, cheeses
    Bake on 375 for about 20 mins covered or until
    cheese is nice and melted.

    Serve with your favorite pasta :) Enjoy!
