Chile con Queso
List of Ingredients
1/2 pound American cheese
1 (4-ounce) package cream cheese
1 clove garlic, minced
3 to 4 chopped green chiles (see Note)
1/2 cup plus 2 tablespoons whole milk
1 tablespoon or more Tabasco sauce, to taste
1 tablespoon dry white wine
1/2 cup diced tomatoes
Dash of sugar
Salt and pepper, to taste
Recipe
In the top half of a double boiler, combine all ingredients and heat until
cheeses are melted and mixture reaches a dipping consistency. Or combine all
ingredients in a microwave-safe bowl, and microwave for 30 seconds at a
time, stirring each time, until it is dipping consistency. Serve with
tortilla chips.
Note: Canned chiles, drained, are fine.
Makes 8 servings.
