    Kahlua Pie

    List of Ingredients





    2 eggs
    3/4 cup sugar
    1/2 cup cornstarch
    1 qt. milk
    1 tsp. vanilla
    9-inch graham cracker pie crust
    Lorna Doone cookies
    1 cup kahlua liqueur
    Candy sprinkles, optional
    1 chocolate bar, optional

    Recipe



    To prepare the custard, whisk together the eggs, sugar and cornstarch in a medium saucepan.

    Add the milk in a slow stream while whisking constantly over medium heat. Continue whisking or stirring until the mixture just begins to boil. Remove from heat and add vanilla, stirring well.

    Working quickly while the custard is hot, assemble the pie. Pour the kahlua into a flat bottomed bowl. Spread a layer of custard in the bottom of the pie crust.

    Dip the cookies individually into the kahlua, turning to coat both sides (do NOT soak!). Place a layer of cookies on the hot custard, breaking them if necessary to fill in any large gaps. Continue layering custard and cookies, ending with custard.

    You should have 3 layers of custard and 2 layers of cookies. You will not need a whole package of cookies.

    Top the pie with a generous splatter of sprinkles, if desired. Using a vegetable peeler, shave the chocolate bar into long curls of chocolate and place on top of pie, if desired.

    Chill pie, uncovered, until set, about 45 minutes. This is very rich.
    Makes 8 or more servings.
