    Use any combination of raisins, dried currants, glazed cherries, candied
    ginger, candied peel, candied pineapple and citron. The longer the fruit
    soaks, the stronger the brandy flavor. Be sure you don't drain the fruit and
    drain the brandy!

    You may substitute thawed frozen orange juice or apple juice concentrate for
    the brandy if desired, or add nuts to the fruit mixture.


    List of Ingredients





    2 cups mixed dried fruit
    2 tablespoons brandy
    1 3/4 cups all-purpose flour
    2 teaspoon baking powder
    1/2 teaspoon salt
    1 tablespoon ground cardamom
    1/3 cup softened butter
    1/2 cup granulated sugar
    2 eggs
    3/4 cup milk


    Recipe



    In a small bowl, combine dried fruit and brandy. Set aside.

    In a bowl, sift together flour, baking powder, salt and cardamom.

    In a separate large bowl, using an electric mixer, cream the butter and
    sugar. Add eggs; cream until light and fluffy. Stir in dry ingredients
    alternately with milk, making three additions of dry ingredients and two of
    milk; stir just until combined after each addition. Fold in dried fruit and
    brandy mixture. Spoon into lightly greased 9 x 5 inch loaf pan.

    Bake at 350 F for 70-80 minutes or until a cake tester comes out clean.
    Let cool in pan on rack for 10 minutes. Remove from pan and let cool
    completely on rack.
