    2 lg Thin-skinned seedless
    - lemons -- sliced paper thin
    2 c Sugar
    4 Eggs -- well beaten
    1 Unbaked 9-inch pie shell and
    - crust

    Recipe



    1. In a bowl, combine lemons and sugar. Allow to stand at room
    temperature,
    mixing occasionally, for at least 2 hours or overnight.

    2. Heat oven to 450 degrees. Add beaten eggs to lemon mixture, and
    stir
    well. Pour into pie shell, arranging lemon slices evenly. Cover
    with top
    crust; crimp edges. Cut slits near center of crust.

    3. Bake pie for 15 minutes, then reduce heat to 375 degrees.
    Continue to
    bake until a knife inserted near rim of pie comes out clean, 20 to
    25
    minutes. Center of pie will continue to set as it cools. Serve at
    room
    temperature or chilled.

    Yield: One 9-inch pie (8 to 10 servings).


    Time required: 45 minutes, plus 2 hours standing and 30 minutes
    cooling
