    DESSERT: Lebanese Rice Pudding
    Makes 4 servings
    Preparation time: about 5 minutes
    Cooking time: about 40 minutes


    1/4 cup white rice
    3 cups 2 percent milk
    3/4 cup rice flour
    1 1/2 cups granulated sugar
    1 scant teaspoon rose water (available at farmers and international markets)
    1/2 tablespoon ground pistachio

    Recipe



    Bring 1/2 cup water to boil. Add rice and boil until tender, about 20
    minutes. Add milk and return to a boil, then stir in rice flour to
    thicken. Remove from heat. Add sugar and whip (or whisk) well.
    Refrigerate until ready to serve. Will thicken as it chills. When
    ready to serve, add rose water and mix well. Pour into individual
    cups. Top each with pistachio.

    Per serving: 537 calories (percent of calories from fat, 7), 9 grams
    protein, 117 grams carbohydrates, 1 gram fiber, 4 grams fat, 14
    milligrams cholesterol, 93 milligrams sodium.
