    SWEET AND SOUR STUFFED CABBAGE

    List of Ingredients





    1 large cabbage
    1 28 oz. can of tomatoes
    1 15 oz. can tomato sauce
    1/4 cup lemon juice
    1/2 cup brown sugar, packed
    1 cup water
    2 cloves garlic, minced
    1/2 cup golden raisins
    8 gingersnaps, crushed (optional)
    2 large onions, sliced
    1 lb. ground beef
    1/4 cup uncooked rice
    1 large egg
    1 medium onion, grated
    1 large carrot, grated
    1/4 tsp. pepper
    1/4 tsp. salt


    Recipe




    PREP: Wash cabbage, then freeze for two days. Defrost the night before cooking. Or, core and blanch cabbage in boiling water until outer leaves are soft and pliable.
    SAUCE: In a saucepan, bring tomatoes, tomato sauce, lemon juice, brown sugar and water to boil. Simmer 10 minutes. Add garlic, golden raisins, gingersnaps and onions.
    STUFFING: In a mixing bowl, combine ground beef, rice, egg, grated onion, carrot, salt and pepper.
    ASSEMBLY: Remove core from head of cabbage. Separate leaves. Place a ball of the meat mixture in center of each leaf and roll up, tucking ends in securely. Place cabbage rolls into large pot on top of onions and remaining cabbage leaves. Pour sauce over rolls and cook over moderate heat 45 minutes to an hour. Bake at 350º F for 2-3 hours, covered. Longer cooking improves flavor.
    Makes 6 servings.
