    1/2 cup red sauce

    1/2 pound linguine

    Recipe

Start a pot of water boiling (about 4 quarts) salted to taste. Add linguine stirring frequently until al dente, about 7 minutes. Retain 1 cup of of cooking water.

Meanwhile, add olive oil to a large skillet over medium low heat. Cook the garlic and crushed red pepper for about 3 minutes stirring until garlic is lightly golden. Stir in the parsley and 2 tablespoons oregano and remove from heat.

When the pasta is done, drain well and add it to the garlic sauce. Cook over medium heat, tossing until the pasta is well coated. Add a little of the reserved cooking water if the pasta seems dry.

Heat the red sauce. Divide the pasta up between 2 plates, forming an outline of a heart shape. Spread 1/4 cup of red sauce on each plate in the center of the pasta and sprinkle with 1 teaspoon of the chopped oregano.
