2 chickens cut in eighths
1/2 cup apricot jam
1 tablespoon white vinegar
2 cloves garlic, thinly sliced
2 tablespoons soy sauce
1 1/2 teaspoons cornstarch
1 tablespoon cold water
Recipe
In a bowl mix together everything but the chicken. Place the chicken pieces
in a baking dish and pour the glaze over the top. Cover and refrigerate 2
hours. Preheat oven to 350 degrees. Bake uncovered for 1 1/2 hours, making
sure to baste the chicken with the sauce twice. Serves 4 to 6. Can be
doubled or tripled.
