Baked Herb Chicken

Baked Tarragon-herbed Chicken Breasts in White Wine with Fresh Mushrooms
4 chicken breast halves
8 oz. fresh mushrooms, sliced
1 tsp chicken base
1/2 cup dry white wine or hot water
2 1/2 Tbsp chopped parsley leaves
1/2 to 1 Tbsp finely snipped fresh tarragon leaves or 1/2 tsp dried tarragon leaves
Salt and freshly ground pepper to taste
Additional sprigs of fresh tarragon and parsley for garnish
Recipe
Arrange chicken breast halves, bone side down, in a 9x9x2 inch baking pan or dish. Arrange mushrooms around chicken pieces. In a 1-cup measure, combine chicken base and wine or hot water, blending well; pour over chicken and mushrooms and sprinkle with parsley, tarragon, and salt and pepper to taste. Bake, loosely covered, in a preheated moderate oven for 50 to 60 minutes or until chicken is fork tender and done.
To serve, arrange a chicken breast half on individual dinner plates; topping each with mushrooms and spoon over the juices from the pan.
