    Chicken and Dumplings

    List of Ingredients





    1 large roasting chicken
    Salt and pepper to taste
    4 cups all-purpose flour
    1 1/2 cups shortening
    Ice water
    About 1 cup milk
    About 2 tbls. butter

    Recipe




    1. Boil a large chicken seasoned with salt and pepper until chicken is done. Debone chicken after it's cooked. Reserve meat and broth.

    2. Mix flour, shortening and salt to taste. Add just enough ice water to make a soft dough. Knead dough well.

    3. Pinch off some of the dough and roll out on a floured board. Cut dumplings. Continue working with dough until all of it has been cut into dumplings. Place dumplings in refrigerator to cool.

    4. Drop dumplings one by one in boiling chicken broth. After all of the dumplings are cooked, add in milk, butter and the deboned chicken. Cook a little while longer.

    Serves 10-12.
