    List of Ingredients




    Lemon Rosemary Chicken, Roasted Red Bell Pepper Risotto, and Sauteed Vegetables

    Yields 2, 4 oz Servings


    2 Boneless Skin-on Chicken Breasts
    2 Tbsp Fresh Rosemary
    1 Tbsp Fresh Basil
    3 Cloves Garlic (Chopped)
    1 Cup Olive Oil
    Juice of 2 Lemons
    Salt
    Pepper
    Chicken Stock
    Madeira
    1 Tomato
    1/4 lb Butter


    Recipe



    Procedure:
    Mix olive oil, lemon juice, and herbs, and marinate breast
    cook in medium sauté pan, skin side down to render fat
    Add salt and pepper to top, and flip
    Place chicken in metal pie pan, and keep warm in oven
    Drain oil from sauce pan
    Add tomato to sauté pan, and cook
    Deglaze with chicken stock
    Add Madeira, and cook off alcohol
    Strain sauce, then return to pan
    Finish sauce with butter
