6 chicken breasts, boneless/skinless
1 1/2 c. macadamia nuts, chopped
3/4-1 stick unsalted butter
2 eggs, lightly beaten
Flour



Recipe



Pound chicken to 1/4-inch thickness, dry with paper towels. Dredge in flour to lightly coat. Dip in eggs to completely cover. Press into chopped nuts covering both sides. Saute in butter over medium heat until golden brown.
