    Almost Mrs. Marshall's Potato Salad (2)

    List of Ingredients





    Makes 5 cups.

    1 cup Hellmann's Real mayonnaise (NO substitute)
    2 tablespoons vinegar
    1 1/2 teaspoons salt
    1 teaspoon sugar
    1/4 teaspoon pepper
    4 cups cooked, peeled, and cubed potatoes (5 to 6 medium), slightly mashed
    1 cup diced celery
    1/2 cup minced onion

    In a large bowl, stir together mayonnaise, vinegar, salt, sugar and pepper until smooth. Add potatoes, celery and onion; toss to coat well. Cover; chill.

    Nutrients per 1/2-cup serving: 230 calories, 2 grams protein, 16 grams
    carbohydrate, 18 grams fat (69 percent total calories), 13 milligrams
    cholesterol, 0.48 gram fiber, 485 milligrams sodium.

    Almost Sally Bell's Potato Salad Recipe
    Makes 5 cups.

    3 hard-cooked egg yolks
    3/4 cup mayonnaise
    1 teaspoon yellow mustard
    3 tablespoons sweet pickle juice
    1 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon ground celery seed
    1 teaspoon sugar
    1 small onion, chopped
    2 ribs celery, sliced thinly
    5 medium boiled, peeled, cubed redskin potatoes, slightly mashed

    In a large bowl, mash egg yolks, incorporate into the mayonnaise. Add mustard, sweet pickle juice, salt, pepper, ground celery seeds and sugar.
    Add onions, celery and potatoes; mix to desired consistency.

    Nutrients per 1/2-cup serving: 206 calories, 2 grams protein, 16 grams
    carbohydrate, 15 grams fat (65 percent total calories), 73 milligrams
    cholesterol, 0.47 gram fiber, 343 milligrams sodium.
