    Servings: Makes 4 servings

    2 cups water
    1/4 cup ReaLemon® Lemon Juice from Concentrate, divided
    1 teaspoon dried tarragon, divided
    1/2 teaspoon salt, divided
    1 pound boneless, skinless chicken breasts
    1/2 cup vegetable oil
    1 teaspoon sugar
    1/4 teaspoon ground nutmeg
    4 cups torn leaf lettuce
    1/2 pound seedless green grapes, halved
    4 ounces feta cheese, crumbled
    1/2 teaspoon pepper, divided

    Recipe



    Bring 2 cups water, 2 tablespoons ReaLemon, ½ teaspoon tarragon, 1/4 teaspoon salt, and 1/4 teaspoon pepper to a boil in a medium saucepan.
    Add chicken. Cover, reduce heat, and simmer about 8 minutes or until done. Drain chicken, and cool 15 minutes.
    Whisk together remaining 2 tablespoons ReaLemon, remaining 1/2 teaspoon tarragon, 1/4 teaspoon salt, and 1/4 teaspoon pepper, vegetable oil, sugar and nutmeg in a medium bowl.
    Cut chicken into chunks; add to vinaigrette, and toss to coat. Cover and chill 30 minutes.
    Arrange lettuce on a serving plate. Top with chicken and grapes; drizzle with vinaigrette, and sprinkle with cheese.
