2 cups country-style bread
6 plum tomatoes, diced medium
1 cup cucumber, peeled, seeded, diced medium
2 ribs celery, diced medium
1 cup red onion, sliced thin
1/2 cup fresh basil, chiffonade
Dressing:
1/4 cup olive oil
2 tablespoons red wine vinegar
2 cloves garlic
Salt and pepperMix together dressing ingredients and set aside.
Recipe
Dice bread into medium pieces and place on a baking sheet. Bake at 300 degrees for about 15 minutes or until dry. Toss together with vegetables. Add dressing, tossing until coated. Let sit at room temperature for about 20 minutes and serve. Serves 6.
