homemade mayonnaise
List of Ingredients
Pour 1 3/4 cup oil into a measuring cup and set aside.
It can be vegetable oil or olive oil or a combination.
In a blender or food processor, add 1 whole egg,
2 egg yolks,
1/4 teaspoon dry mustard,
1/2 teaspoon salt and
1 teaspoon fresh lemon juice.
Begin blending on a medium speed and slowly drizzle in the oil.
It should take about 3 minutes to drizzle in 1 cup oil. Stop the blender, stir and taste.
Add more lemon juice if desired. Begin blending again, taking another 2-3 minutes to drizzle in remaining oil. You'll have about 2 cups.
