    Cold Cucumber Soup

    List of Ingredients





    2 TBL butter
    1/4 cup chopped onion or 1 leek sliced & cubed
    2 cups diced, unpeeled cucumber
    2 cups chicken stock
    1 cup watercress leaves
    1/2 cup finely diced raw potato
    2 parsley sprigs
    1/2 tsp salt
    1/4 tsp pepper
    1/4 tsp dry mustard
    1 cup cream

    Chopped chives, cucumber & radishes for garnish
    Melt the butter in a saucepan & cook the onions in it until transparent. Add the remaining ingredients except the cream & vegetables for garnish & bring to a boil. Simmer 15 minutes or unitl the potatoes are tender.
    Let cool clightly & puree in a food processor. Correct the seasonings & chill. Before serving, stir in the cream. Garnish w/chopped chives, cucumber & radishes.
