    Cream Cheese Mints

    List of Ingredients


    • 1 8-ounce package cream cheese, softened
    • 2 tablespoons peppermint extract
    • 3 pounds powdered sugar
    • food coloring of your choice
    • granulated sugar
    • flexible molds


    Instructions


    1. Mix cream cheese and flavoring well, then add food coloring - darken all you want because it will lighten when you add the sugar. Cake icing coloring works the best.

    2. Add one whole pound of powdered sugar first then a little at a time to prevent crumbling.

    3. Pinch off a little and make into little balls. Shake in granulated sugar. Press balls of mint dough into molds, remove excess with your fingers. Turn out onto waxpaper and let air dry for 24 hours on each side.

    4. These can be refrigerated for up to 3 weeks.



    Final Comments


    Note:
    Sprinkle a little granulated sugar into the molds, this makes removing the mint easier.
