    List of Ingredients




    2 chicken breasts, cooked and chopped
    1 c. celery, chopped and cooked
    1 c. rice, cooked
    2 T. chopped onion
    1/4 c. mayo (I use fat-free)
    1 can cream of chicken soup, undiluted (I use Campbell's Healthy Request)
    1 T. lemon juice

    Topping:
    2 T. butter (I use low-fat)
    1/2 c. crushed potato chips (I use low-fat or fat free)

    Recipe



    Mix all ingredients in a casserole dish and cover with topping.

    Better if refrigerated overnight or for several hours. Bake at 300 degrees for 1 hour.
