    List of Ingredients




    1 lb. ground beef or veggie burger
    1 cup (small) chopped onion
    3/4 c. Garden Style Salsa, mild (or your favorite)
    1 pkg. (1 1/4 oz.) taco seasoning mix
    1/4 c. water
    1 c. whole kernel corn
    1 can (2 1/4 oz.) sliced ripe olives, drained (optional)
    1 pkg. (8 1/2 oz.) corn muffin mix, plus ingredients to prepare (I use Krusteaz fat free cornbread mix)
    1 c. (4 oz.) shredded cheddar cheese
    1/2 c. (4 oz.) diced green chiles

    Recipe



    Cook beef and onion in medium skillet over medium-high heat until beef is done; drain (if necessary). Stir in salsa, taco seasoning mix and water. Bring to a boil. Reduce heat to low; cook 5 minutes or until mixture is thickened.

    Stir in corn and olives. Spoon into ungreased 8" square baking pan.

    Prepare batter for corn muffin mix according to package directions. Stir in cheese and chiles. Stir until smooth; spread over meat mixture.

    Bake uncovered, in preheated 350 degree oven for 30 to 35 minutes or until crust is golden brown. Top with additional salsa, if desired.
