    Serves: 4 to 6

    List of Ingredients




    2 T. butter or margarine (I use low fat)
    3 T. all-purpose flour
    1 can (14 3/4 oz.) cream style corn
    1/4 c. yellow cornmeal
    2 eggs, separated or egg sub. equiv.
    1 package (3 oz.) cream cheese, softened (I use fat-free or low fat)
    1 can (8 3/4 oz.) whole kernel corn, drained

    Recipe



    Preheat oven to 350 degrees.

    Melt butter in medium saucepan. Add flour and stir until smooth. Blend in cream style corn and cornmeal. Bring to a boil over medium heat, stirring constantly.

    Place egg yolks or 1/2 of egg sub. in a small bowl; stir in 1/2 c. hot corn mixture. Pour mixture back into saucepan. Add cream cheese and whole kernel corn.

    Place egg whites in clean narrow bowl and beat until stiff peaks form. With rubber spatula, gently fold egg whites into corn mixture or add remaining egg sub. to mixture.

    Pour mixture into 1 1/2 qt. straight-sided baking dish.

    Bake 30 to 35 minutes or until lightly browned.
