    List of Ingredients




    3 1/2 c. cooked, drained macaroni
    7 oz. (1 3/4 c.) shredded, cheddar cheese
    1/2 c. finely chopped onion
    3 T. chopped parsley (1 t. if dried)
    1 3/4 c. low-fat cottage cheese (I use fat-free)
    1/2 c. evaporated skim milk
    2 t. Dijon-style mustard
    Salt and pepper to taste
    1 slice bacon cooked crisp or bacon bits (to taste)
    1 slice bread, crumbled
    3 T. grated Parmesan cheese

    Recipe



    Preheat oven to 350 degrees.

    In large bowl, combine macaroni, cheddar cheese, onion and parsley.

    In blender or food processor combine cottage cheese, milk and mustard. Process until smooth.

    Pour over macaroni mixture and mix thoroughly.

    Season to taste with salt and pepper.

    Turn into 2 qt. casserole dish coated with non-stick spray.

    Mix bacon bits, bread crumbs and Parmesan.

    Sprinkle over casserole. (You can lightly spray the top with butter flavored cooking spray if you like)

    Bake 20 minutes.
