    List of Ingredients




    1 1/2 lb. veggie burger
    1/2 c. chopped green onion
    15 oz. pinto beans, cooked
    1 red bell pepper, chopped
    4 oz. canned green chiles, diced (optional)
    Salt and pepper to taste
    7 oz. low fat corn chips or 6-inch tortillas
    4 red-skinned potatoes, thinly sliced and cooked
    1 c. mild salsa
    3 oz. low fat or fat free mexican blend cheese
    1/2 c. nonfat sour cream
    Chopped cilatro or parsley for garnish

    Preheat the oven to 400 degrees.

    Saute' the veggie burger and onion in a nonstick saucepan. Add beans, pepper and chiles. Salt and pepper to taste.

    Prepare to create 3 layers of ingredients in a casserole dish that has been coated with nonstick cooking spray. Place a layer of corn chips (or 1 tortilla), then potatoes, salsa, veggie burger bean mixture and cheese. Repeat until all ingredients are used up.

    Bake for 15 to 18 minutes.

    Spread the top of the hot casserole with sour cream and garnish with chopped cilantro or parsley.

    Variations: Add a can of drained corn kernels or green beans for additional vegetables. Use red, yellow and green peppers combined. Use chicken or turkey in place of veggie burger.
