    Serves: 4

    List of Ingredients




    low fat corn chips or baked corn chips
    1/2 lb. low fat ground turkey or veggie burger
    1/2 c. chopped onion
    3/4 c. mild or medium taco sauce
    1 can (4 oz.) shopped green chiles, drained
    1/2 c. frozen whole kernel corn, thawed (thaw by running under hot water for 1 minute)
    1/2 c. (2 oz.) shredded cheddar cheese (I use low-fat)

    Recipe



    Heat a medium nonstick skillet over medium heat until hot. Add turkey and onion. Cook and stir 5 minutes or until turkey is browned and onion is tender. Add taco sauce, chiles and corn. Reduce heat and simmer 5 minutes.

    Arrange broken chips over bottom of 1 1/2 qt. casserole. Spoon half of turkey mixture over chips; sprinkle with half of cheese. Repeat layers, beginning again with broken chips.

    Bake 10 minutes or until cheese is melted and casserole is heated through. Break more chips over the top of casserole.
