    Chili (w/Beef or VeggieBurger & Beans)

    Recipe Introduction

    Preparation Time: 25 min. Cooking Time: 40-45 min. Serves 4

    List of Ingredients

    nonstick cooking spray
    2 teaspoon olive oil (I usually leave out the oil in any recipe like this and use non-stick spray or a little water)
    3/4 pound beef top round steak, cut into 1" pieces (or substitute veggie burger)
    1 clove garlic, peeled, minced
    2 medium carrots, washed, peeled, trimmed, diced
    1/2 onion, peeled, diced
    1/2 green pepper, washed, cored, diced
    1 tablespoon chili powder
    1 teaspoon ground cumin
    2 cups canned or stewed tomatoes
    1 teaspoon sugar
    1 can (15 oz.) red kidney beans, drained

    Recipe

    Spray large (4-qt.) nonstick pot with cooking spray. Add oil and heat over medium high heat. Add beef and sauté, turning frequently, until browned, 8-10 min. (veggie burger will already be cooked and just needs to be heated through, this will not take very long and no oil is required)

    Transfer beef to paper towel to drain. Add garlic, carrots, onion and green pepper to pot. Cook over medium heat, stirring frequently, 5-6 minutes, or until soft.

    Add chili powder, cumin, tomatoes, sugar and beans; cook, stirring all 1 minute. Add meat and bring to a boil, reduce heat, cover and simmer 10-15 minutes to thicken slightly. Serve immediately.

    Veggie Burger that I have tried is Morning Star Farms and Bocca Burger.
