Chicken w/ Pears

Serves: 2 - tastes equally good warm or cold
List of Ingredients
6 oz. skinless, boneless chicken breasts
1/4 c. chopped onion
1/2 t. poultry seasoning
1/2 c. fat-free or regular chicken broth
1/2 c. evaporated skim milk or ready-made nondairy creamer
1 (16 oz.) can pears packed in juice (not syrup, if available)
Recipe
Lightly spray a skillet with nonstick cooking spray.
Cut the chicken into julienne strips and add to the pan. Stir-fry over medium heat until the chicken loses any pink color, 3 to 4 minutes.
Add the onion, seasoning and broth and continue cooking, uncovered, for 10 minutes.
Add the milk or creamer and cook until broth is reduced by one third and slightly thickened.
Add the pears and heat just until they are heated through.
Note: If you prefer, puree the pears and use them to thicken the sauce.
