    Serves: 8

    List of Ingredients




    1 large onion, sliced (about 2 cups)
    6 large garlic cloves, minced
    2 large bay leaves
    8 (8 oz.) skinless chicken breasts (bone in)

    Sauce:

    1 c. tomato juice
    1/3 c. cider vinegar
    1 1/2 t. salt
    1/2 t. red pepper flakes or Tabasco
    1 T. Dijon mustard
    2 T. lemon juice
    2 T. brown sugar
    2 T. Worcestershire sauce
    1/2 c. ketchup

    Recipe



    Preheat oven to 300 degrees.

    In a bowl, combine all sauce ingredients.

    In a baking pan large enough to accomodate the chicken in one layer, spread out onion, garlic and bay leaves.

    Lay chicken on top and ladle sauce on generously.

    Bake in a 300 degree oven for 45 minutes to 1 hour or until juices run clear.

    If you would like the sauce to be thicker, remove the chicken to a platter to keep warm and place sauce under broiler until it bubbles and onions turn golden brown.

    Pour sauce over chicken and enjoy!
