    Serves: 6

    List of Ingredients




    3 lb. small red potatoes, cut in half
    2 stalks celery, thinly sliced
    1/4 c. thinly sliced red onion
    1/4 c. seasoned rice vinegar
    1/4 c. low-fat mayo (I use fat-free)
    1/2 c. nonfat sour cream
    1/4 c. chopped parsley
    1/2 t. celery salt
    1/2 t. white pepper

    Recipe



    Place potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, 15 to 20 minutes (depending on size of potatoes). Drain and run cold water over them to cool. Add remaining ingredients, chill and serve.
