    My Grandma Mary (McQuin) Brownfield's Cookbook

    List of Ingredients




    1/2 c. onion, chopped
    2 c. boiling water
    1/2 c. diced celery
    4 c. milk (I use skim or evaporated skim)
    2 c. fresh or frozen corn
    2 t. salt
    1/2 t. pepper
    approx. 4 medium potatoes, scrubbed and sliced or chopped into cubes
    Bacon bit for garnish (if desired)

    Recipe



    In a sprayed nonstick skillet saute' onions and celery until onions are limp and transparent.

    Add water and potatoes. Cover and cook 20 minutes or until potatoes are tender.

    Add milk, corn, salt and pepper. Cook uncovered 5 to 6 minutes or until corn is tender.

    Crumble bacon bits as a garnish if desired.
