    Serves: 6

    List of Ingredients




    1/2 c. chopped onion
    1/2 c. chopped red bell pepper
    3 c. frozen corn, thawed
    3 c. vegetable broth
    1/8 t. cayenne pepper
    2 medium potatoes, peeled, cubed, and cooked until tender
    2 T. chopped fresh parsley
    1 T. chopped green onion

    Recipe



    Saute' the onion and red pepper in a pot lightly sprayed with cooking spray until the onions are very limp.

    Put 2 cups of the corn and 1 cup of the broth in a blender and process until smooth.

    Add the puree to the pot of onions and peppers.

    Add the cayenne pepper, potatoes, and remaining corn and broth.

    Heat through, sprinkle parsley and green onion on top, and serve.
