    White Bean and Toasted Onion Spread

    Makes 1 cup

    List of Ingredients




    1 c. finely chopped onion
    1 t. reduced-sodium (or regular) soy sauce
    1/8 t. pepper
    1 (1 lb.) can white kidney beans (cannellini), rinsed and drained or 2 c. cooked beans

    Generously spray a medium nonstick skillet with cooking spray, cook onion and stir frequently, until onion is brown, about 10 minutes. (The secret to the flavor of the spread is to let the onions get nicely browned, but do not let them burn.)

    In a food processor or blender container, combine onions with remaining ingredients. Process until smooth.

    Serve with crackers, sliced french bread or toasted pita triangles. It can also be spread on carrot or celery sticks.

    Serve again hint: Make a delicious quesadilla by spreading the leftovers on a flour tortilla and placing on a griddle. Fold tortilla in half and press down gently. Heat tortilla, flipping it back and forth, until hot and crispy on both sides.
