    Serves: 4 - Prep. time: 15 minutes plus bean and corn cooking time - Cooking time: 10 minutes

    List of Ingredients




    1/4 c. water, nonfat chicken broth or vegetable broth
    1/2 c. onion, chopped
    1 clove garlic, chopped
    1/2 c. chopped green bell pepper
    2 c. home-cooked or canned black beans, drained and rinsed
    1 c. cooked fresh, frozen or canned corn kernels
    1/2 t. ground cumin
    1/2 t. ground coriander (cilantro)

    Recipe



    Heat water or broth in a skillet over medium heat. Add onion, garlic, and green pepper. Cook and stir over medium heat for 5 minutes. Add water, if necessary to prevent sticking.

    Add black beans, corn, cumin and coriander. Cook 5 minutes or until beans and corn are warmed through.
