    List of Ingredients




    1 small russet potato
    2 T. sour cream
    Dash dried basil
    1 oz. (1/4 c.) shredded low-fat mozzarella cheese
    1 T. chopped chives (1 t. if dried)
    1/2 c. sliced, steamed mushrooms

    Recipe



    Scrub potato and pierce with fork on both sides.

    Microwave on HIGH for 3 to 5 minutes, or until potato feels soft when pressed. (Turn potato over after 2 minutes for more even cooking.

    Let stand 2 to 3 minutes.

    Slice potato in half and scoop potato pulp from shells leaving 1/4" border.

    In small bowl mash potato pulp with sour cream, basil, half of the cheese and chives. Fold in mushrooms and spoon mixture back into potato shells.

    Sprinkle with remaining cheese and chives.

    Microwave on HIGH 2 minutes, or until heated through.
