    3/4 cup sugar

    1/4 cup cornstarch

    1 cup water

    1 tsp. grated lemon rind

    1/3 cup lemon juice

    3 oz cream cheese

    2 egg whites with 1/4 cup sugar

    pie shell (baked)









    Recipe



    In a pan, add:sugar, cornstarch,water,lemon rind, lemon juice,. Add two eggs slightly beaten.


    Cook over medium heat. Remove from heat add cream cheese and blend well.


    Prepare meringue: beat two egg whites with sugar, fold into lemon mixture.


    Spoon into pie shell. Chill two hours.


    Top with cool whip if desired.
