    Guacamole

    Recipe Introduction


    This is the best and freshest tasting guacamole I've ever had! I found the recipe at SaladRecipe.com


    List of Ingredients


    • 3 medium avocados
    • juice of 1 lime
    • 1 teaspoon salt
    • 1/2 cup diced onion
    • 3 tablespoons chopped fresh cilantro
    • 2 medium Roma tomatoes, diced
    • 1 teaspoon minced garlic
    • cayenne pepper


    Instructions


    1. Cut avocados in half and remove pits. Scoop out flesh into a medium bowl.

    2. Add lime juice and salt; mash avocado flesh until smooth, or to preferred texture.

    3. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper if desired.

    4. Refrigerate for 1 hour for best flavour, or serve immediately.



    Final Comments


    I like to serve this as a dip with tortilla chips. Makes about 3 cups. I've kept this in the fridge for up to 3 days and it still tastes great.
