    Jenn's Mexican Chili

    List of Ingredients


    • 1 to 1 1/2 lb lean ground beef
    • 1 onion, chopped
    • 2 celery stalks, chopped
    • 1 green pepper, diced
    • 1 to 2 cloves garlic, minced
    • 1 - 14 oz can crushed tomatoes
    • 1 - 10 oz can tomato soup
    • 1 - 12 oz can kernal corn
    • 1 - 19 oz can black beans, rinsed and drained
    • salt and pepper to taste
    • 1 to 2 Tbsp chili powder
    • 1/2 tsp cumin
    • Topppings:
    • fresh cilantro
    • grated cheddar cheese
    • sour cream
    • tortilla chips
    • green onions, chopped


    Instructions


    1. Brown ground beef, onion, celery, green pepper and garlic together in large pan.

    2. Add remaining ingredients, except the toppings, and simmer for 30 minutes. Add some chopped, fresh cilantro about 5 to 10 minutes before serving.

    3. Serve on a bed of broken tortilla chips and top with grated cheese, sour cream, green onions and chopped, fresh cilantro leaves.
