    Spicy Rapid Roast Chicken

    List of Ingredients


    • 2 to 3 pound chicken
    • 1 tablespoon olive oil
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • 1/4 teaspoon paprika
    • 1/8 teaspoon cayenne pepper


    Instructions


    1. Preheat oven to 450 degrees F (230 degrees C).

    2. Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry.

    3. Put chicken into small roaster pan. Rub with olive oil.

    4. Mix the seasonings together and sprinkle over chicken.

    5. Roast the chicken in the pre-heated oven for 20 minutes.

    6. Lower the oven to 400 degrees F (205 degrees C) and roast until done, about 25 minutes longer for a 2 pound bird or 40 minutes longer for a 3 pound bird.

    7. Let cool 10 to 15 minutes and serve..



    Final Comments


    Add chunks of potatoes, carrots and onions around the chicken for the last 30 minutes of cooking.
    Season the vegetables with a combination of the spices listed above before cooking.
