    Mexican Rice

    Recipe Introduction


    I combined 4 different recipes for Mexican Rice to get this one that I like the best! It can be spicy or mild depending on how much cayenne pepper you add.


    List of Ingredients


    • 2 cups cooked rice, long grain white
    • 1/4 cup green pepper, chopped
    • 1/4 cup celery, chopped
    • 1/2 cup onion, chopped
    • 1 large (19 fl oz) can toamtoes, mashed
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon cumin
    • 1 tablespoon cilantro, chopped
    • salt to taste


    Instructions


    1. Saute pepper, celery and onion together until tender.

    2. Add seasonings, cilantro and tomatoes. Heat thoroughly.

    3. Mix in rice and serve.



    Final Comments


    Makes enough to serve 4-6 people as a side dish. You can add a can of drained and rinsed black beans to make this into more of a main dish.
